A little mango know-how while you’re choosing yours:

Smell before you squeeze — ripe mangoes don’t always change colour. A sweet fragrance near the stem is the best sign they’re ready.

Old-school ripening trick — mangoes have traditionally been ripened in rice or straw to trap natural ethylene (paper bags work too!).
